No the seats I removed have a corresponding yellow plug so I assumed it was within that connector?

Good news is I've dealt with the esp light and that is now off.
By playing around with the codes of which there are only 4 it will accept it seems if I change the 0 to a 3 I get just one fault shown

Did you have the same number of plugs on the new seats as the old seats?

Were the seat belt anchors supplied with the old seats?

If you put your original coding in, does it give the same DTC as with the donor car's code?

It's weird that it says open circuit.

you definitely have to perform the occupancy sensor reset, but it's saying that it can't find it.

/I guess it wouldn't hurt to try at this stage.
