It’s been a long time since I had the RS ticking over. Do you think it’s safe to do so with it in the state that it’s currently in or am I likely to fry the poor girls brain if I do, how much pressure is there to likely to build in the brake hoses when starting?

I’d pull the fuel pump and ignition fuses and turn for about a minute before starting-long as you don’t push the brake pedal I can’t see why it would have a hissy fit

No pressure in the brake hoses unless you press the pedal. It might dribble a bit and if you haven't sealed off the brake hoses you might pull some air in, but you'll be flushing and bleeding anyway so it probably doesn't matter.
Yeah, I can't see the problem in starting it. I would turn it over for a few seconds with fuse 29 pulled to prime the oil ways first.

Just be careful of those size 13's jabbing the brake pedal.
And don't be surprised when it starts up like a clattery old thing - if been sitting for a few months, very likely some of the lifters will have sunk all the way down. This is not the normal second or 2 of clatter - it's the ticking noise as a lifter sometimes sticks down a bit until everything gets properly warm, which is hard on the driveway.
