I don't believe that there is any parameter which controls this behaviour - I suspect that it's down to the firmware version in your central locking controller. I had mine upgraded from version D37 to D38 in order to fix a known bug. I can't be certain what the behaviour was before this update.
My little 'experiment' reminded me of one of the other 'clever' features - if you have the two stage unlocking enabled, the automatic unlock on removing the key only unlocks the door which was last unlocked so, after my experiment, my wife's door didn't unlock. The other thing which catches me out almost ever time I go to fill up is that the filler flap doesn't unlock with the driver's door - you need to unlock all the doors.

My S3 is a 2001 model and my girlfriends Golf is a 2000. I've noticed something else on the Golf.
If I open the doors with two presses on the remote, this opens all doors and boot. If I open the boot without opening any of the doors, when I shut the boot, it locks again
I suppose you could lock the keys in the boot and would need to climb through the 60/40 split 
My S3 doesn't do this either ...

Just to add to the confusion, my S4 sometimes locks itself when the keys are in the ignition (and all the doors are closed!)...

You might also have guessed that the doors dont autolock when all the doors are closed, after a timeout period. Anyone know if this is a Vagcom fix or something more complicated?

Not sure if I follow your last bit, as they should autolock if the doors have been unlocked without the doors being opened. You're correct, that's what they should do, but mine dont that any more, just wondered if there was a fix.
Whats worse is that I once left the keys in the ignition, with all the doors closed, and it did autolock!

Mine autolock but if on entry I only pressed keyfob once therefore only opening the drivers door then when I remove keys from the ignition then only the drivers door unlocks. If I do all doors on entry then all doors unlock. It does not re-lock doors unless ignition is switched off and on.
