DazN, are you still thinking about jumping ship? I've got a similarly spec'd B8 S4 (it was mine with the V-spokes you referred to earlier) and I too have grappled with the concept of selling up many times for similar reasons. It's only natural to wonder whether the grass is greener but I'm continually drawn back to my S4, for good reason I think.
I too share your concerns on the following areas, so let me share my opinions and recommendations if I may.
Noise
Simply upgrade the exhaust and let that engine sing! When I first bought mine I struggled to tell that it was a V6 which was hugely disappointing, and that was with a Milltek resonated system. Converting to non-res completely transformed my enjoyment of the car - there's a lovely deep tone now, combined with the crack on the S-tronic upshifts and the blip on downshifts it's been likened to the sound of GT3 racers. Every journey is an occasion, simple as that. The only down-side to the Milltek non-res is a slight drone on the motorway. If you can't live with that I strongly recommend the Supersprint exhaust. I had a passenger ride in a B8 S4 with one fitted and it was just sublime - more muted perhaps but an absolutely gorgeous tone.
Drama
The issue here is the capability of the drivetrain combined with the safety-oriented balance of the handling in stock form - the limits are more challenging to explore, and arguably not as rewarding as they could be. Firstly, to overwhelm the traction by adding a dollop of power and torque. The MRC remaps really are that good, and in my mind a no-brainer. Fuel economy and driveability are improved, no TD1s are flagged at Audi dealers, and the extra performance is mind boggling. If you opt for stage 2 you also get a lovely subtle supercharger whine on full chat. Finally, a stiffer rear ARB is a cost-effective way of injecting some interest into the handling balance. Mine has this, and with the sport diff in dynamic mode you can now play with the car through bends, pivoting it with the throttle.
Looks
This is a trickier one. The B8 is a handsome shape but the S4 basically looks like all of the other S-line A4s out there. RS4 grille, a ride height reduction and some more interesting wheels will help lift it visually but ultimately it's never going to match an RS4 or M3 for kerb appeal. Embrace it for the Q-car appeal
Whether you sell up or not is entirely up to you, but I would strongly recommend fulfilling your S4's untapped potential before you do so. You won't regret it, I promise

I tried the C63 and couldn't live with the fuel consumption, I opted for the S4 as didn't want an estate car, I am getting the Scorpion exhaust
as I know them and have had three of their exhausts and have been very pleased with them, there are alot of more expensive exhausts out
there but for quality and customer service they can't be beaten never heard of one of their exhausts coming back for rust and all made in the
UK Derby to be precise.
I have the grill and sorting out wheels, ride height will make a judgement call on that in a few months, But I love the car the power and the understated
looks, May even wrap it in satin grey next year if I get bored with the black

I remap them as a hobby, had it set up perfectly using in gear load limits and accelerator pedal mapping. You didn't get full power until 4th. Took me ages to get it right for my driving style. In the wet it would spin 5th at 100 mph though!! Was all that on stock internals too? Would assume you'd need an uprated fuel pump along side the bigger turbo, intercooler and exhaust. Any other mods required to get it to that stage? Was it running meth?
