Yea should be able to, there labour rate is cheap. Surly you can do it, search on a few owner clubs on how to remove seats. Only thing that will be a PITA is having the correct tools...

Yes sure, what tools do you need? I might not even have the correct ones for the seats. The B7 uses star sockets for the front seats and then torx and hex sockets are needed for the Recaro frames. Saying that, I am free next week in the day times but not evenings. Im on nights for the next 2 weeks
