about chip tuning

chip tuning has some parameters of course; like the quality of gas right ?!?
i dont understand one thing then , how come a mail order chip can perform good?

A mail-order chip can perform more or less good, but most times it won't perform optimally, I've been there done that too in my first days of tuning...

Real-time or online tuning with an eprom emulator plugged into the ECU, that has real-time access to the maps, plus an EGT gauge+probe, and possibly a wide-band lambda sensor and display. This is the way I do my tuning and it's the way tuning should be done. "Generic" or mail-order chips work for standard setups to a certain extent but the maximum power/torque can't be had without taking serious risks, which I hate doing.
