3 bar MAF

Does the ADU engine have a 3 bar MAF?

It seems that I cant get any more pressure than app. 1.5-1.6 bar now.
When I adjust the pressure to more than that the engine starts to run badly.... (I have upgraded exhaust, turbo etc....)

have you had car remapped for new ignition timing and fuelling? if not the ECU can only compensate so much before things start going wrong.

Yes it does have 3bar pressure sensor.

Don't know how you've upgraded the Motronic maps, would suspect the same as Greg, it runs out of fuel & ignition maps

MAF is Mass Air Flow sensor.....this doesn't have a pressure rating as it measures air speed which the ECU can determine as mass flow rate.
An RS2 has, as standard a 3 bar MAP sensor (Manifold Absolute Pressure). This is absolute pressure so can measure up to 2 bar above nominal atmospheric pressure (well theres an altitude sensor for further compensation inside the left hand A pillar).
Stock ABY S2 is 2.5bar MAP sensor and the 3B S2 has only a 2bar one.

Isklov, are you using a manual boost controller by any chance? This is not good on an S2 or RS2...be very careful. And you've upgrade turbo and exhaust too? You need a custom remap to take advantages of these changes to keep things safe/reliable and to maximise performance/economy.
