When using the MMI method I tried to test whether you have to actually select a different mode then select the mode you want or whether you can just highlight the mode you want (that you are already in) and press sleelct to activate the flaps. Bit as my flaps were disconnected at the time I couldn't tell if it actually works or not.

Mine starts in open when hot, but closed when cold - sounds louder for first min though when cold due to fuelling / higher revs.

Just want to clarify this, my car does not start up in the last drive mode selected. It always starts it would appear in comfort mode, even though when I switched off the ignition it was in Dynamic mode. Confusion is when you get back in the car and start it up and press drive select , then it shows as dynamic mode ie it displays the mode you switched to, but the car IS NOT in this mode, you have to cycle through the modes and land back on dynamic mode to put the car into it, it always reverts back to comfort mode on restarting. I have established this not through the flaps/exhaust sound, ( as they are always open in every mode on start up & then close after a few seconds anway ) but through the gearbox selection. In Dynamic or individual mode my car is set so S mode for the gearbox, and whenever its switched off the car always reverts back to D when I turn it on, so clearly when I have been driving in Dynamic it is not in the last mode selected when I switch it back on & its in D. You can tell the throttle response as well is different, So certainly on my car, the drive mode always resets to comfort when it has been switched off, despite what the drive select says...you need to cycle back to the mode you want to get it out of comfort

It cycles engine back to comfort. Knock gearbox into S and that's fixed.

I don't think it cycles back to comfort as the suspension and steering is still dynamic; it just starts with the gearbox in drive. As doodle says though, just pull the lever and it is back into full dynamic.
