I am now the proud owner of a 2011 Daytona Grey RS5.
Really want to facelift it to 2012 body spec.

Does anyone have a comprehensive list of parts required to do the job?

Any help or info on the conversion would be really appreciated.

Not a comprehensive one but generally you will need:
bonnet
headlamps c/w control packs
head lamp brackets
bumper with fog grilles etc
grille
front bonnet seal
headlamp vent hoses
some VCDS coding

By the time its all painted theres not much change from 5k
