I've been having some conversations with folks about cars with 500bhp+... the vast majority (incl. those that own sports cars and cars w/500bhp+) are of the opinion that C6 is past its "prime". Albeit prime is open to interpretation, I'm still off the opinion that there is very little on the market for under 20k that can be a daily driver, offers practicality and transforms into a super car 'on demand'.
I'd be keen to get your thoughts?

One of the sad facts of life is that cars continue to get better. It's easy to get stuck with a particular brand or model, and try to make the most of that, but technology does get left behind. Have you ever driven an RS6 C7? It may "only" be a 4.0 V8, but it's an impressive car in every respect.

I did and i have my eyes set on S8 4.0 (14 plate on).
The argument i was having is more around 500+ bhps and sub £20k (e.g. C7s are significantly more expensive - still).

I've been eyeing the S8 as well, it seems to make a lot of sense, and better value than any version of the RS6. My brother keeps bending my ear to get one of those instead of an RS6.
I currently have a Merc S600, and that's an awfully good car for the money, and has active suspension done right. The engine and gearbox aren't special, but the suspension is.

Just considering performance vs practicality I'd say it's well past it's prime as it's been surpassed a few times by quite a few newer cars, including the newer M5 BMW and E63 AMG MB's etc which have finally realised you need AWD when you have high power levels on daily drivers, but if you consider the cars current price vs performance i.e. a £20k RS6 vs £20k other cars, then the RS6 is still extremely well balanced in the "fast daily driver" market.
I mean how many other £20k daily drivers have such a mix of high reliability, great practicality and the ability to make 750+hp for under £2500 extra, but even comparing it to the C7, now selling at around £30-35k which can do everything the C6 can but has far better interior tech, just shows how far the game had moved on from C6 in just a few years.

I think it really depends on how you look at cars. I tend to buy older performance cars, firstly as I really hate depreciation on cars and secondly because of cost. I couldn't spend 60-100 grand on a car. If I had the money I may but there is still the amount of depreciation.
My main reason for buying a car is that I like it. Usually its fitted around what I need but more often desire is the key factor. I like cars that may in some way be the last of their type. Or be a rarity on the road.
As mentioned there are now many superior cars to the C6 RS6. However for the price it would still have enough to give them a fright. Plus for me it's like the E39 M5 or older AMG cars. It is subtle looking enough to be a wolf in sheep's clothing.
For me it's just coming into it's prime, it's almost the old man who can still out box the young pretender. Because of it's relatively low price it's became the plucky underdog, it has developed something so very rare for VAG cars, it has a bit of soul and character. That stupid impractical V10 with 2 turbos, just because they could.
The only thing I wish it had was a manual gearbox option.
