is there any way of disconecting the link that cuts the throttle when you touch the brake pedal

throttle and brake at the same time is sometimes useful when bedding in brakes or cleaning them after valleting.

can you eliminate this with vagcom or do you need a rechip first??

IIRC MRC enable left foot braking with their remaps, I dont think it's something in VAG COM

VAG-COM definitely can't do it.
