FATS stands for For advancement of the S and is a standard test to measure performance. Involves logging the time it takes to get from 4200rpm to 6500 rpm in third gear using WOT (pedal to metal). Youll need Vag com to do one. I did mine and got about 6.5 secs which is OK for stock but anything below 5 secs and your into stage 2/ 3++.

thatd be about 70 mph to dead on 100mph on mine

Most reliable data source would be some form of log, either VagCom or ECU explorer. There a quite a few online FATS calculators that use various rounding algorithms (datapoints very rarely match to 4200 and 6500) to give you a calculated time.
No you don't need to log, but it does give you a good baseline and performance guide. Very usefull to look back on after modifications or replacement parts are fitted.

Yeah you need to log as this can diagnose other problems. Log block 3 for a MAF reading - if your getting low g/s then might need a new MAF. Another useful block is 115 which gives boost pressure(actual vs requested) and may help diagnose faulty wastegates/ a leak in IC hoses or TBB.
