Saw a 57 saloon on Friday being driven very slowly on the M1, so may be a possibility but I would think you may only be able to count them on one hand.

stoke audi have a v low milage ex dem saloon in dark grey on the forecourt. on a 57plate

Plenty of low milage demos around, some saloons and a few avants.
Many 57 plate cars came into the dealer network from Audi UK, dealers keen to move them on.

For some reason I'm a little put off buying ex-demo cars.....anyone else or is it just me?

I bought an ex-demo...but it'd never been demoed....if you see what I mean.
You can get a great deal because the franchise will claw back money from Audi on the basis that when they do come to sell the car, it will suffer the stigma to which you allude.
I had to sign a waiver to cover their ass, because technically the car should have a certain number of miles on it in order for them to claim it was a demo, and mine didn't have any miles on it...or rather it had delivery miles on it.
If it really had been used as a demo, I'd have been a little more circumspect, but if you're going to get £7-8K off list as a result, I know what I'd do.
Its all under warranty anyway.
I've had no problems with mine whatsoever except the usual B7 RS4 issues....software updates, slight sporadic smoking on start, very light suspension knocking on rebound (just started - not yet taken car to dealer to be looked at), graunching noise on full lock (sorted by retro-fitting new parts)...

My last two cars have been ex-demo cars - no major issues experienced at all.

and optics don't look great on Daytona...
and he's parked on double yellows...
and who wants a cool box...
and the oem iPod connector is rubbish...
and I'm not sure I believe the SS+ bit...
