Low Oil/engine temperature

So about 25 min hard drive the result was maximum 97•c then cruising 60-70mph temperature went down to 79-80’C and engine temp was maximum 75-80 then when I stopped the water went up to 90’C
Yesterday I fitted a new K&N airfilter but I dont think so this is the issue for the Low water and Oil temp
Could be thermostat? If yes where can I buy new one?
If not thermostat whats wrong?

When you say engine temperature are you actually talking about the oil temperature?
The water temperature gauge has been fiddled with by Audi. Once it gets to operating temp, circa 90 degrees it just stays there as people would think there was something wrong with the changes in temperature. On other cars if you went on the motorway you could see the temperature drop, then other times you could see the temp rise, the fan come on and the temperature would drop. But not Audis (and many other cars now), they get to normal temp and just sit there unless your engine is literally melting.

Yes water temperature and oil temperature both 80 degrees

After hard drive today again, went up to 95 then back to 87 degrees

Try using an Audi approved oil. Using motorsport derived oil in an everyday car, is most likely your issue.

No, i worked in the audi factory and they never ever use castrol 5w30 even when they tested the engines, miller nano drive probably the best oil for high rev cars and build lot less carbon then audi recommended oils,
Lot of RS4 owners using this oils. But probably thermostat the issue

Working on on assembly line is different to product development. With all those contacts, why ask about your issue here. Surely they'd know best?

Because I asked 4 different RS4 forums, and some people had a same issue and they already answered me today that 99% thermostat always open thats why the temperature is low, because if closed then overheating, but mine is very low

I don’t get what the actual problem is, there’s nothing wrong with the your oil running at those temperatures. Why is u want them to be higher?

Normal temperature is 90-100 but after long journey the temperature still 78, and water temperature jumping up and down 70-90.
Been at service and yes the thermostat is stuck open. So ordered new one

Which one, as I'm struggling to understand how one faulty thermostat effects both systems.

Because if the thermostat is stuck open the engine cannot warm up to running temperature because the coolant is always cooling the engine, thats why the water and the oil cannot warm up to the normal temperature.
Thats what other owners said who have a same problem. But also been at audi and they said to me the same even they didn’t check the car. Technician said to me when he saw the dashboard that 99% thermostat is stuck open.
But we will see car booked next monday. I will let you know the results

Update: thermostat replaced and engine/water temp now normal
