That's what I'm struggling to understand. It was flagrant though. Used to run at exactly 90° all the time (normal running), now runs at ~82°C confirmed by vagcom. I don't think I'm getting unmetered air in, my A/F and lambdas look good.
My theory was that combustion was better, hence running cooler. If unmetered air was getting in, I'd expect it to run hotter.
what temp does your oil get up to?

when you changed the plugs they were torqued tight = no extra air, not lean, running cooler...
but either way, the stat should hold a temp, only its position should change...as long as not over loaded...
I've noted these correlations:
obviously OA temp
oil level, mid hatches run cooler vs top mark
oil age, after 3 or 4k miles it seems to run a little hotter 5f or so...
I have changed plugs, but did oil also, so didn't ntoice the change

after new plugs, it feels alive again, and I'm guessing it's the tightness as much as the new plugs, because I change mine frequently ~25k to 30k miles (at least according to the mfgs) and they are seldom fouled, worn, eroded...
I tighten them carefully too, in 2 stages...
if it calls for 18 lb ft...
I'll tighten to 17 lb ft 1st pass, then once again to 19 to make sure all is good
