Need help launching a S3 and some other questions

Whatsup guys, i have a stock 8L 2001 S3, has dunlop street tyres with the 17 inch avus quattro rims. Im afraid i might break the clutch when racing so what is a safe rpm to launch the car at and what percentage of throttle should i launch at?

Is it normal for the idle to fluctuate 250rpm when the motor is cold and hot? Could it be dirty injectors or airflow meter

Where is the haldex oil filter located and what oil should i use?

Shouldn't fluctuate that much! Could be MAF, plugs, filter etc if you do not know the history! I've some Denso IK22's on the way
