I've had two high milers (this one's just about 190K) and they were both well looked after examples, IMHO it's best to find one that's been serviced by a specialist rather than main dealers all it's life.
Try to find a car that's been well looked after by an enthusiast, chances are they will have observed the warm up / cool down routines, serviced it as it should have been etc.
As soon as you find a good one and buy it, get a health check done (yourself / mrc / whoever) as you'll want to eliminate any and all boost leaks.
Personally I'd get silicone hoses on there and replace the DV's for 710N's / Forge / Baileys (whichever you fancy - I got Forge's) this way you'll be helping to protect your turbo's, particularly when you remap it and start making extra boost.
Oh and acquire a vag com lead + laptop + vag com software - the software emulates the Main Dealers diagnostic equipment, and helps in fault finding / recoding certain functions etc etc.
