Hi.
Brakes soft from cold. Doesn’t change at all continues to be soft and spongy at all times.
Hard pedal gone. Haven’t had this since throttle body seals replaced.
Foot on brake. Start the car. Pedal used to move slightly. No movement at all now.

Keep foot on brake pedal. Start the car. No pedal movement at all.

And I'm assuming that if you keep your foot on it, it doesn't sink. Doesn't really sound like the master cylinder then.
I'm also assuming that when the calipers were replaced all the brake fluid was replaced, too. If not, then do that. In fact, do that anyway.
I sometimes buy some cheap stuff to purge with (eg. https://www.carparts4less.co.uk/p/pagid ... -524770271) before putting the good stuff in. Annoyingly you can't get coloured fluid any more so it's hard to tell when the cheap stuff runs out. Still, at 2 quid a bottle, you can afford to overshoot.

Yes new brake fluid at unit 20 this week.
Also with engine off. Pump the brake pedal and the brakes get firmer with less and less pedal movement with each pump.
Eg the brake pedal rises each time you pump it.

Engine off. Pump the brake pedal gets firmer and firmer until pedal is all the way up. Start engine and pedal does go down a bit.

That sounds like normal, your using what vacuum is left in the system when pressing the brakes with the engine off, hence the pedal getting firmer, I do recall the pedal should sink slightly when engine is turned on whilst pressing the pedal as vacuum is built so basically the reverse of what happens when you have the engine off, but the fact you have servo assistance means the system is working.
I had a friend and he had loads of trouble with his brakes, it was a mk1 TT so same vintage as the c5, an ABS bleed with VCDS gave him pedal feel back, they said the fluid that came out the abs block was rotten, it’s apparently a two or even three person job as you have to activate the bleed with VCDS and open both front bleed nipples at the same time, I think they just done a side at a time though.
