VCDS, which one?
I now currently have a couple VAG cars and probably best to get the VCDS lead, but never having one which ones are people using? Primarily for the RS6 (03) but i also have a VW CC (13 plate) so will it cover both of these also?

VCDS covers all vag cars (from a certain year to the present day). You can get a cheap cable and the free software, but options are limited. It boils down to what you want to do with it and how many cars you want to use it on. I have an unlimited hex-can cable, whereas some new ones can only be used on a certain number of unique VINs

Edit: personally for the price you pay you’ll get your money back within a few years easy. We’ll worth the money.

Mostly to check for codes on the RS, but im lead to believe i can alter and change some settings on the CC via Vagcom so would ideally be for both
How difficult is the coding to work with? In reality, im decent on a pc but definitely no coding wizard, is there any guides as to how to alter coding to suit etc or should i leave well alone?

I personally purchased an unlimited version. The long coding helper brings up an easy to use graphical set of options when coding.

The RossTech Wiki is a mine of information. The most important thing to remember is to record (and verify that you've got it correct) a long code before you make any changes to it.

You can start with a limited-VIN version and upgrade if you need to.
Most things can be done, even if you want to help friends, without needing to register the VIN, so it's a cheaper low-risk option.
