Key In position 1 fans we’re running.
Cleared the temperature fault and the fans switched off.
However the car is cold and it is showing G62 coolant temperature as 138 degrees c.

I don't know what an RS6 is like, but on my S8 the key things I noted are:
1: Work out how to release the wiring plug by looking at the new unit, somehow it's not that obvious.
2. Unless you tie a piece of string to it you'll probably lose the retaining clip on removal and reinstallation.
3. Might need a bit of gentle persuasion to get the sensor out and equally back in with a new O-ring. If properly seated the clip slides in/out with minimal resistance.
4. Clean the socket out carefully.
5. Start with a cold engine, release any pressure then put the header tank cap back on tight before you start and you shouldn't lose any coolant.
6. Access on the S8 engine is a bit of a PITA for the clip so I fabricated a tool to align it involving string and a drinking straw, then pushed it in with a big screwdriver.

This is what the wiring connector looks like from the side. You have to lift that funny catch away from the sensor to release the connector which then pulls off very easily.
If you can get a screwdriver blade into the slot marked with the red cross then twist to widen it will just slide off.
Usually there's something in the way though.
IIRC when I refitted my sensor I took careful note of the orientation so that the catch would be easily accessible in future, pointing away from any obstructions.
I expect Audi have a special tool that releases it trivially.

Or if you can get the sensor out with the connector still on it, then you can easily orientate it to get at the tab. That's a reasonably big if.

Charger is very hot to touch. Is this normal. Only been on for 3 hours.

Depends what you mean by "very hot". If you can't hold in in your hand then I'd worry.
The charger is in the bulk charging phase and probably putting 4-5A into the battery. It'll be dissipating as much heat as it ever does in this phase.

Sounds like it's doing it's job. It won't get so hot on 4.
