Actually the second bump is normal in the sense that I pressed the pedal (say 40% of full throttle?) so a boost is expected. What seems odd to me though is that the specified boost almost didn't move. And yes there is a lag that can be felt when driving the car, quite a long lag to my taste actually, which solidifies your assumption that there is still an air leak somewhere whether internal or external.
I still have the old waste gates, putting them back is an easy job so I'll do that first.
Regarding the short term trim values, last time I checked they were close to zero as expected, and stayed safely within a +-10 range. I need to check the long term values, but for that matters I haven't seen a rich or lean fault in the ecu.

I’m saying that the ECU asked for boost but your Vagcom isn’t sampling fast enough to catch the peak.

Currently changing the dump valves, but I just noticed that pipes 12 & 14 are really full of crap (dark greasy paste). Could well be totally blocked... [edit : not blocked (air can pass through, but VERY dirty]

During the last 2 days, I had the feeling the car got better after all this cleaning work, but this morning, after the usual warming time it felt sluggish again. A quick scan back home at idle showed the discrepancies between MAFs was worse than ever: around 50-60% difference with a strange mechanical noise and a constant 'wooooooh' which seems to come from underneath the manifold... In addition I now get a System too lean fault on both banks (codes 17538 / 17536), I hate this
It may be that the dirt is moving inside the crankcase and blocking pipes /valves which explains why I get different behaviours at different times. Time for an oil change anyway, it's more than a year by now.
Checked VCDS Website for suggestions of causes:
- Mass Air Flow (MAF) Sensor faulty : already covered
- Oxygen Sensor(s) faulty : the lambdas are new from last year
- Oxygen Sensor Control faulty
- Fuel Injector(s) faulty
Regarding the lambdas, I made a log at idle. I'm certainly no expert, but lambda's readings on Bank 2 look a bit rough to my taste (although MAF on Bank 1 is much lower than on Bank 2):

After letting the engine off for 20 minutes, it's back to the 'standard' behaviour: 20% discrepancy between MAFs.

I'm curious about this whooshing noise. Can you record it wit h your phone?
The PCV flow is from the crank case and valve covers to either the inlet manifold or upstream of the turbo, depending on pressure conditions. You think maybe your PCV system has a clot that's moving around? In which case, it's likely to be after the new valves.
I guess you could try by-passing the PCV system temporarily to eliminate it. You would block the connections at the inlet manifold and upstream of the turbo so no air can pass. The blow-by will vent to atmosphere while you are doing this test, so you can't run the engine for too long like this.
If the problem is resolved, then you know it's in the PCV system somewhere. If not, then it's on to the next thing.
Your too lean error is weird. That's most likely unmetered air getting in. Could be a good clue. Implied that the system may have an external leak after all.

I believe pipes 2 and 3 are going to upstream of the turbo, and 26 is going to the inlet manifold. Did you replace the non-return valve 16?

Yes the non return valve 16 is brand new oem part.

I'll try to record the whooshing noise when it comes back, you never know when you get it..

Yes axis is time, not in seconds though, but I can check the duration of a pseudo sinus period with the log.
