Weird. For what it’s worth my oil temp will sit at 85 ish and definitely below 90 all day long for normal day to day driving.
Just a comment. Could you have some sort of blockage. When you thrash it the increase in oil pressure forcing the oil around the system so it gets cooled.
The only difference between standard driving and thrashing it can only be the oil pressure imvho.

Yeah maybe - I can’t think of anything else really.
I will raise it as possibility with the garage and see what they say.

Check ATF temperature and see how it correlates with oil temp. Check oil temp sensor function for faulty operation (Matt's idea is a good one for this).
Also log the coolant temp at the same time as the oil temp. Don't forget the gauge on the dash is not a reliable indication of coolant temp.
What oil are you running? And what filter?
Might be worth doing an oil pressure test.

Thanks Shoppinit - spoke to the garage today. I don’t know what oil is in it because it’s a new car to me.
We are going to start from the beginning. Give it a good flush, blow compressed air through the cooler, fit new filter and properly specc’ed oil.
Do you think wrong oil viscosity could cause these problems I’m having? What filter is recommended these days?

Yeah, could be wrong filter or oil. If they put some 10w60 in or something. Get an OE filter. Or a Mann.

So had a new Mann filter and Shell 5w40 oil put in today and it’s made a difference, although not completely remedied the issue.
Went for a 40 minute drive. The oil temperature sat(as indicated in the gauge) fairly comfortably between 100 and 110 degrees. Which is a great improvement over the 120+ indicated before.
I got to some standing traffic and it slowly raised to 120 again and wouldn’t come back down.
Will go for another drive tomorrow and see what happens after a linger stretch.
Conclusions so far are that the oil spec or filter has made a difference - but ultimately it still ends up hot.

120 degrees c is too hot for day to day driving when comparing to my oil temperatures
I have never seen those temperatures even on days of spirited driving.
Did the garage flush the system ? Oil circulation ?
Blockage ?
Cooling fans working ?
Does the temperature still drop when you give it a quick drive ?

Yeah had a flush.
I haven’t got round to putting the temperature Sticker on the filter yet so I need to check this.
Garage said they let it idle up to 120 on the gauge. Gave it some revs to 3k rpm and the thermostat opened and cooled the system down. They were of the opinion that the system is working properly and I shouldn’t worry about it.
They noted that one of the lines to the cooler had been replaced by a braided hose. Also noted that oil temp between 100 and 120 was the sweet spot otherwise you would never burn off moisture. He said if it was his car he wouldn’t be worried.
However its clear that the function is not normal when comparing everyone else’s experience on the forums.
I will continue to explore but for the time being I’m going to get on and try to enjoy the car rather than worry about it

I have acquired an infra red gun thermometer and taken a reading from the oil filter. (Easier than getting underneath with the heat Sticker)
Gauge is reading 120 as per normal but I’m getting 105C on the thermometer.
So the sensor might be over reading…. Where is it located? Oil sump pan? Is it simple to replace?
I will finally try to get VCDS running to get readings from there, but would they be false if the sensor is faulty anyway?

But it should be 85ish anyway, so clearly there's still an issue. What temperature were the pipes going to and from the oil cooler?

Totally agree with Matt.The temp should be around 85 degrees.
