S2's i viewed on fri

I wnet and viewed a couple of S2's from a mate on the S2 Central forum but one of my main concerns with one car was that on normal running with engine warmed up it would tickover at 2bar but as soon as you started to move away and use the throttle the oil pressure would rise up to 5bar and try to go off the gauge and stay there! any ideas what could be causing this? also on start up it would tickover at 200-400 rpm then you blip the throttle would go up to 600-800rpm hunt for couple of seconds and then was fine for the remainder of the run?
