Hope you have more luck with the police than I did, they simply weren't interested. Does sound opportunistic, although I'm convinced mine had a tracker put on it.

Have you considered a Pandora Alarm? If the worst happens you can disable from your mobile or the internet, anywhere in the world.

I assume the car was never found?

Sorry to hear this, sounds very similar to what happened to me in 2019 so I know how you feel. Sadly at a level there is very little you can do, there are some very serious gangs out there who will do whatever is necessary to take such a car. Hopefully all things considered they'll just pay you out despite it being cheaper to repair. Assume the interior was them looking for a tracker?
