It’s entirely to be expected that the warranty would be voided with a remap. This is a well trodden topic on here and elsewhere.

VWFS rates were laughable, I went elsewhere.
Be aware your seven year plan starts on the day manufacture was completed not when first registered. This was one point of contention/learning from my experience.

GAP back to invoice presumably? Probably easier to get agreed value on the insurance policy than pay twice. NFU works best with new cars with the new car clause for vehicles under two years old.
