Engine temperature readings

Is it normal to get different readings from the two temperature displays? The bars on the left side of the dash quickly rise to 90 with the associated rev limit increase, but the temp reading on the lap timer screen takes much longer to increase. There can be a differential of 30 degrees at times. Are they taking readings from different sensors? I'm always gentle with the car from cold but I'm not sure which one indicates the engine is fully warmed through.

The one on the dash is water temperature, that will always get to temp the quickest.
The other is oil temp and will take longer, I always wait until it gets to 90 degrees before loading the engine too much.
