Mav, you can unplug the crank position sensor. Not sure it's easy to get to, though.

What else will stop the car starting... maybe the cam position sensor but I'm not sure about that one.

Maybe the fuel pump relay. You might be able to get at that from beneath the steering wheel. That'll prevent the car starting if you remove it.
