Mines is mapped to 420ish as well, and I noticed the fuel consumption dropped by a couple of MPG after the remap.
I'm currently now averaging around 20 mpg, but I'm having an experimental tank run at the moment to see how 'economical' i can get it, by taking it easy on the pedal and not pushing the engine. 1/4 tank and 80 miles in, Im currently averaging 26mpg (and thats really trying!!)

My old 996 C2 (3.6 flavour) would also struggle to get over 25mpg, and my mates 996TT gets around the 20 mpg mark as well. Dunno how you were getting much more than that.

29-30 on the freeway? Damn, best I've gotten is 25-26mpg on the freeway, 450hp tune, US gallon. Are you guys talking imperial gallons?

In town I get 19-20mpg.

Yes, they're talking imperial gallons. A US gallon is approx 20% less than an imperial gallon.

So 25-26mpg (US) is approx 30-31mpg (imperial)

That could only have been a one off, on a loooong motorway run..
Even driving it carefully, I'd be surprised if you see over 300 miles on a tankful..... either that or you have a diesel under the bonnet!!
