No, VCDS needs to be used due to the electronic hand brake, you can try it that way but you will end up wrecking the handbrake servo.

Correct.
Some people have tried winding the rear ones like normal (on the A6 rather than RS6 but same thing) and reported no issues but not worth the risk if you ask me.

you can disconnect the motor and wind them back in and then connect the motor back up its not a big job if you don't have access to VCDS

Just done mine, used the OBEleven, all very simple, with the Brembo pads you get 2 wear sensors for some reason?

Yes I noticed that. Maybe some cars have 2 rear sensors?
