At a guess, I'd imagine that it's the fluid rushing within the chamber due to air gaps and hitting the end of the chamber/base valves which causes a knock.

Would this not make the suspension act in an unsafe manner or handle any differently to a car with no knock ? I know you can hear the knock at slow speeds but would this action inside the chamber affect the car on a spirited drive at higher speeds ?
