I've had a Chevy 5.7l v8 and agree; great engine but very low and lazy, even at tickover you can hear them making a slow blub blub blub and when moving the engine is lumpy and you can almost feel the pistons pulsing.

Yeah- I had a 6.2 corvette v8 car and it was crazy lazy. 70mph at 1800 rpm in top gear but still had buckets of shove.
Considering the engine tech is very very old school (2 valves, push rods, fuel injection not direct) it made good power. About 450ps at 6000 rpm and peak torque of something like 434 lb/ft. Although the dash readout saying at idle the fuel consumption was 0.5 gallon / hour was a bit scary. I occasionally got 18mpg on a nice run.
Starting the car up gave a big shudder from the car.
