Would it be necessary to send all the wheels in the same week? Can they not be staggered?

I just back from Royal. Dropped mine to him a couple weeks back (unfortunately missed the time on the group buy). Jack is an awesome guy and the quality of his work is flawless. Whoever is on the group buy you have made a good choice I had mine and my friend had his E92 M3 in Alcantara. It is amazing how nice it feels to drive with a retrimmed wheel. I had my steering a bit thicker by asking to have the new leather over the old one (adds about 2mm he said) and I went with silver stitching and had the gaiter and gearknob done. Feels like driving a new car and the additional thickness makes a big difference for me. I also asked him to put the new badge on. I got the one from TPS but the pins didnt match up so removed my old one and stuck this one in. I would highly recommend getting this done. Thanks to Ross for finding the place

Been meaning to do this for a while now but I dont have the flat bottom wheel and not sure if its worth the effort.
Whats the turn around on them?

Here's mine done by Royal. It's been done about 2 months now and it's still looking and feeling great!

Any guides on how to remove steering wheel and gearknob?

Dean it's pish easy mate.
Two little tabs behind the wheel, prise off. Undo screws they cover, airbag comes off. With airbag off, undo big bolt on end of rack. Undo connector plug for steering wheel button wiring. Job's a goodun.
I didn't bother disconnecting the battery and all that jazz as I'm such a rebel. Most people say that you should because of the airbag but i've never had an issue...

I'd probably contact RSW about that mark - is it obvious if it's been done in transit or before shipping? Probably hard to tell. :/
Either way - it wasn't your fault so you shouldn't suffer for it if you can't deal with it. The boys at RSW are exceptional with customer care so I don't think you'll have a problem. The only 'issue" is of course that to rectify it'd need retrimming completely again - so you'll be without the wheel for another 2 weeks or so.
RE airbags - I've worked on plenty of cars with airbags and never once disconnected the battery to work near/on them. You've got to try pretty hard to set an airbag off tbh (and yes, I've done that too for sh1ts and giggles ). Really can't be arsed disconnecting the battery to remove a seat. Then the hassle of resetting the warnings with VCDS because you've disconnected the battery in the first place! Screw that.
Perhaps one day, with a freak of nature and the right amount of static in the air, with the devil on my shoulder, perhaps an airbag will go off. But until then - I'll continue my rebellious ways
