Air con - ECO mode

My air con is stuck on ECO mode, the LED goes off if you press and hold the ECO button, but comes back on as soon as you release it.

Has anyone had this problem before or any idea what it might be? Sensor/switch etc?

Either your system has a leak and is (next to) empty; If you have access to OBD2 soft-/hardware (e.g. VCDS), you could read the pressure in the system and confirm. Or, the pressure sensor on the LP side is kaput, a common fault, then you'd have to exchange that. It lives right behind the front bumper, and if you have small hands/fingers, it's a possible DIY project. Videos on YT do exist.
