Without a remap, nowhere :D Fuel and timing will be totally out of whack, and the ECU won't be happy and will throw codes, so without a remap I can't see any point in trying to up the boost.

my s3 has a revo stage 1, what would anyone recomend winding the boost up to without causing any damage

I wouldn't up the boost any further without better cooling. You really want to fit a FMIC before you go any further so it doesn't get too hot under the bonnet. Plus you will be able to run higher boost with the FMIC anyway.
