Just doing the cars first service and doing the anti roll bar back up and one of the bolts sheered off.
Anyone have any ideas how I can fix this?

Unusual to sheer a bolt doing it up. At least you know it'll be free in the threads.
Either use a stud remover, tap it round anti-clockwise with a punch or cut a slot in it and try to remove with flat blade screwdriver.

If you remove the other bolt and the U bracket and drop the ARB out of the way you might be able to weld a nut into the thread that is sticking out.

The front ARB had studs which are fitted through the subframe - then there is a nyloc nut to attach the ARB bracket. Think someone else snapped one a while ago.

I don't suppose the stud is removable if I can get some purchase on it or slot it as advised. Or is it going to be one of those hateful jobs of drilling it out.

You could either get a new console*:
4B3 199 351C (left) or 4B3 199 352C (right)
Or remove it from the subframe and get it machined with a new stud.
*You'll be pleased to know they are quite cheap but you will probably need to get the geometry done afterwards.
