Tbh im no dyno expert but SL-Tuning are very much a 2.5 TFSI speclist and there results fall in line with all others, maybe even a little conservative.

Can also recon/upgrade a used turbo and intake to above spec for 1899.00 euro inc vat

Will that Haldex controller manage pushing 500PS around the car? Forgive me for being lazy (I haven't read about Haldexes in a while) but is there a clutch / friction plate inside that could wear out?

It has a clutch... and 500PS is about the limit as I understand it (though the torque figure will be the actual limiting factor). The one that has been tuned below has clutch slip on the STronic already, though they reckon that can be solved with a gearbox ECU map.
