I just wanted to know whether I should be put off by cars with more than 100k on the clock?

I only ask because I've never owned a fairly old car before (nothing older than 3 years iirc).

I think the whole carbon thing has been blown out of proportion. If you can accept that the car has about 390ps as standard rather than 420ps then it is not an issue and the car will happily run without any cleans. If you want the full 420ps and are happy to keep having it cleaned then fair enough ...
